Pudina rice is a healthy, simple yet tasty recipe. All you need is a bunch of Pudina leaves to go. The summer is at its peaks and to maintain a healthy yet tasty food, I switched on to my mother-in-laws Pudina Rice recipe. As pudina has its own strong flavour, she chooses not to overwhelm it with other spices. After trying my hands on different recipes, I came back to the simple one for obvious reasons – this being the tastiest!
Required Ingredients
- Pudina: 2 bunches/ one cup of leaves.
- Ghee: 2 teaspoons.
- Green chilis: 2
- Cumin: 1 teaspoon.
- Asafoetida: 1/2 a teaspoon.
- Onion: 1
- Cashews nuts: a handful.
- Turmeric: 1/4 of a teaspoon.
- Salt: To taste.
Step by step images to make Pudina Rice.
Take a pan and heat 2 spoons of ghee.
Add cashew nuts and fry till golden brown. PS: my family doest like cashew in rice recipes so I skipped to the next step. Add cumin, asafoetida and let them sputter.
Add slit green chilis and chopped onions. Cook the onions brown.
Add in the coarsely ground pudina leaves and turmeric powder. Cook till the oil separates.
Add cooked rice, salt to taste and give a good mix.
Of the rice recipes, my family loves this more. Tastes best with onion raita. Give it a try and let me know how it turned out to be!
